Chinese meatballs, known as Lion’s Head meatballs, because of the larger size,  are a popular recipe often served during Chinese New Year. Lion’s Head meatballs are often made with ground pork, ginger and other spices.  This adaption combines ground pork and turkey to reduce fat content without eliminating flavor.

Preparación : 
  1. In a bowl combine ground pork, ground turkey, eggs, ginger, garlic, scallions, carrots, water chestnuts and salt. Mix well until everything is evenly incorporated.
  2. Divide meatball mixture evenly into about 15 meatballs, roll lightly with hands into loose round balls.
  3. Preheat Braiser pan on medium heat approximately 5-7 minutes or until several drops of water sprinkled on the pan skitter and dissipate
  4. Brown meatballs for about 3-4 minutes on all sides. Brown meatballs, but don’t worry that they are not cooked through at this point. Remove meatballs and set aside on clean plate.
  5. In a small bowl combine tamari and sesame oil.
  6. Shred cabbage into thin strips by placing cabbage leaves on top of each other and slicing thinly. Place shredded cabbage into a bowl of cool water, lift cabbage out of water and drain, shaking off excess water.
  7. Place shredded cabbage in Braiser pan to cover bottom of pan, spreading it out evenly, pressing down slightly so all of the cabbage fits into Braiser pan.
  8. Place meatballs on top of cabbage. Pour tamari mixture over meatballs.
  9. Place cover on Braiser pan, with heat set to medium. When Vapo-Valve™ begins to click steadily; turn heat to low and cook for 12-15 minutes until meatballs are cooked through and cabbage is soft.
  10. Serve portion of cabbage with meatballs on top, garnish with extra chopped scallions if desired.
Consejos: 
  • Substitute ground pork for ground beef
  • Add sliced shitake mushrooms to shredded cabbage.
  • Use a ice cream scoop to form meatballs. If meat is sticky, run hands or ice cream scoop under lukewarm water before forming meatballs.
  • Serve this dish as is or add additional side dishes; steamed rice or noodles.

Nasu Nibitashi or braised eggplant is a popular Japanese side dish. Nibitashi refers to a style of braising vegetables in a seasoned broth. One of the main ingredients in the braising liquid is Dashi, a simple to prepare broth flavored with kombu, a sea vegetable and Bonito flakes. Long, thin Japanese eggplants are traditionally used in this preparation, If unavailable, substitute with smaller eggplants.

Preparación : 
  1. Preheat Mini Braiser pan over medium heat until a sprinkle of water skitters and dissipates, approximately 7-9 minutes.
  2. While Mini Braiser is preheating, trim ends off of eggplants. Cut eggplant in ½ lengthwise. Score eggplants halves on skin side, making shallow cuts across top of eggplant. Slice scored eggplant halves on diagonal into 3” pieces.
  3. Bring water to a boil in sauce pan. Add bonito flakes and Kombu simmer for 2 minutes and strain into a bowl.
  4. Add ginger, tamari and mirin to Dashi liquid and stir to combine.
  5. Place eggplant pieces in a bowl, fill bowl with room temperature water to cover and let sit for 2-3 minutes. Lift eggplant out of water and place in a clean bowl, shaking off excess water.
  6. Cook eggplant skin side down for 5-8 minutes until browned. Turn eggplant pieces over and pour braising liquid over the top.
  7. Place lid on Braiser pan. When Vapo-Valve™ begins to click steadily turn heat to low and cook for 15-20 minutes until eggplant is very tender.
  8. Remove lid, take pan off the stove and let eggplant cool to room temperature in pan.
  9. Serve eggplant hot or at room temperature, garnish with minced scallions.
Consejos: 
  • For a vegetarian or vegan version omit bonito flakes from Dashi broth.
  • To add a little bit of spice to braised eggplant, add a pinch or two of crushed red pepper flakes to braising liquid.
  • Braised eggplant is delicious served hot or at room temperature.

Beef tenderloin pieces or cubes of steak braised in a garlic and chili broth with red wine is popular in Southern Africa.  Beef Trinchado is said to have its origins in Portuguese cuisine.  Serve this dish with French fries, roasted potato wedges or bread to sop up the delicious sauce.

Preparación : 
  1. Place trimmed and cubed beef in a bowl. Add Worcestershire sauce, paprika and garlic. Stir to combine and let meat marinate for 30 - 60 minutes.
  2. Preheat pan over medium-high heat. When several drops of water sprinkled in pan skitter and dissipate, approximately 5 - 7 minutes. Add half the beef cubes and braise for 3 - 4 minutes on each side until well browned. Remove from pan and place on a clean dish, along with any extra juices in pan.
  3. Cook remainder of beef cubes in same way. Remove from pan.
  4. Add onions to pan and sauté for 6 - 8 minutes until softened and lightly browned.
  5. Return meat to pan, along with any juices that accumulated on dish, and sprinkle with flour. Stir to evenly coat meat and onions.
  6. Pour wine and beef stock over meat. Add bay leaves and stir to combine.
  7. Place cover on pan. When Vapo-Valve™ begins to click steadily, reduce heat to low and cook for 30 minutes until meat is tender.
  8. Taste and adjust seasonings as needed with salt, pepper and extra cayenne, if desired.
Consejos: 
  • For a gluten-free dish, substitute all-purpose flour with oat flour or a gluten-free flour blend.
  • Substitute cayenne pepper with 1 - 2 small hot red chili peppers, chopped.
  • Braising time will vary depending on the cut of meat used.

Over a span of 40 years, food and nutrition research related to the benefits of eating breakfast has conclusively shown many advantages not only for children, but for teens and adults as well. Replenishing blood glucose - the brain’s primary energy source - is important. Breakfast fuels the body’s muscles for physical activity throughout the day and brings your body out of “fasting” mode. 

Breakfast skippers are often restless, irritable, and feel tired in the morning. Researchers at Harvard University found that breakfast-eating adults were one third less likely to be obese compared to breakfast skippers. You are also likely to find that the food and nutrition obtained from eating a healthy breakfast curbs hunger and prevents binges later in the day. 

Breakfast, providing proper food and nutrition, prepares children for the challenges they face in the classroom. Kids who don’t eat breakfast tend to suffer academically and are tardy more often. Breakfast-eaters have improved hand-eye coordination, verbal fluency, higher attendance levels, less tardiness and fewer hunger-related stomach aches in the morning. They solve problems more easily, concentrate better, have better muscle coordination and are less likely to be overweight. Breakfast is essential food and nutrition providing children a jumpstart on their daily requirements of calories, protein, vitamins, minerals and other nutrients.

 Breakfast Ideas by the Dozen

Try these quick and easy breakfast ideas:

  1. Ready to eat whole-grain, low-sugar breakfast cereal (6 grams of sugar or less per 1 ounce), fruit and skim or 1% milk.
  2. Whole-grain toast or graham crackers with a thin layer of peanut butter. Top with bananas. 
  3. Whole-grain bagel with low-fat cream cheese, ricotta cheese or peanut butter.
  4. Omelets made with vegetable or low-fat cheese fillings.
  5. Grilled cheese sandwich and fruit juice.
  6. Pancakes (measure out dry ingredients and place in bags, making your own mix) or French toast with fruit topping.
  7. Fruit smoothies (try bananas, frozen strawberries, pineapple juice, yogurt and a touch of vanilla). 
  8. Hot cereal such as oatmeal or grits topped with cinnamon, cloves, or nutmeg and a few nuts.
  9. Yogurt blended with fresh fruit and granola.
  10. Sliced hard-cooked eggs stuffed in a whole wheat pita pocket.
  11. Cheese pizza and fruit juice.
  12. Breakfast casserole - Try mixing the ingredients the night before, refrigerate.
